Some things are best simple, just like my diction. Sweet potatoes are no exception! They are perfect because they house so much flavor with very little outside help. They are much more independent than their cousin, the regular potato. Today I’ll show you my go to method for cooking sweet potatoes with just a pinch of salt and a drizzle of olive oil.

Simple Sweet Potato

  • olive oil
  • 1 sweet potato
  • salt
  • sour cream (optional)


  • tin foil
  • baking sheet


  • Preheat the oven to 400 F.
  • Cut a sweet potato in half lengthwise. 
  • Cover the baking sheet with tin foil to prevent olive oil from getting on it (this helps with cleanup).
  • Place the potato halves on the tin foil and lather them in olive oil.
  • Sprinkle some salt on the flat orange side of the halves and turn them face down.
  • Put the baking sheet on the middle rack of the oven.
  • Cook for 25 minutes, then turn the potato halves to face upwards and reapply a little salt (this prevents the “wet potato” dilema).
  • Poke a sharp utensil into the potato to test it. If it goes more than half way through the potato half, it is done. If it does not, cook face up for another 10 minutes.
  • Keep probe testing your potatoes until they are done. 
  • Once out of the oven, they are ready to eat!

The olive oil actually pulls a lot of weight in this recipe. It covers the potato in an olive oil glaze that would impress any Krispy Kreme lover. I like putting some sour cream on my sweet potato, but you do what you want. Let me give you a sense of my experience eating this potato. Each bite is like eating half a Mendocino Farms sandwich, thinking that you ate the whole thing, then looking down and realizing with unprecedented joy that you still have half left. It never gets old. My tongue was immediately presented with the classic sweet potato taste, accented, but not masked, by the presence of salt. Following closely behind, the skin offers a sweet, caramelized treat to finish off the bite. Rinse and repeat, I finished off both halves before getting a chance to sit down at the table. I would highly recommend trying out this simple and rewarding technique for your next sweet potato rodeo.
