Preheat the oven to 400 F.
Cut a sweet potato in half lengthwise.
Cover the baking sheet with tin foil to prevent olive oil from getting on it (this helps with cleanup).
Place the potato halves on the tin foil and lather them in olive oil.
Sprinkle some salt on the flat orange side of the halves and turn them face down.
Put the baking sheet on the middle rack of the oven.
Cook for 25 minutes, then turn the potato halves to face upwards and reapply a little salt (this prevents the “wet potato” dilema).
Poke a sharp utensil into the potato to test it. If it goes more than half way through the potato half, it is done. If it does not, cook face up for another 10 minutes.
Keep probe testing your potatoes until they are done.
Once out of the oven, they are ready to eat!
